- 1 lb ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (16 oz) refried beans
- 1 can (10 oz) enchilada sauce
- 6 large flour tortillas
- 2 cups shredded Mexican cheese blend
- 1/2 cup sour cream (optional, for serving)
- Fresh chopped cilantro or green onions (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook the ground beef and onion until the meat is browned and the onion is soft. Drain excess grease.
- Stir in the taco seasoning and water. Simmer for 5 minutes until thickened.
- Add the refried beans to the meat mixture and stir until well combined. Remove from heat.
- Spread a thin layer of enchilada sauce on the bottom of the baking dish.
- Place a tortilla in the dish, add a layer of the beef and bean mixture, sprinkle with cheese, then repeat layers until all ingredients are used, ending with cheese on top.
- Pour remaining enchilada sauce over the top and sprinkle with any remaining cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes or until cheese is bubbly and golden.
- Let cool for 5 minutes before slicing. Serve with sour cream and garnish if desired.

- Swap ground beef for ground turkey or chicken for a lighter version.
- Add jalapeños, corn, or black beans to the meat mixture for extra flavor and texture.
- This casserole can be made ahead and refrigerated or frozen before baking.
