Description

Baked Burrito Casserole is a hearty, family-friendly dish that layers seasoned ground beef, refried beans, cheese, and tortillas all baked to bubbly perfection. It’s a comforting and easy meal that brings classic burrito flavors to your dinner table with minimal effort.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) enchilada sauce
  • 6 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup sour cream (optional, for serving)
  • Fresh chopped cilantro or green onions (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the ground beef and onion until the meat is browned and the onion is soft. Drain excess grease.
  3. Stir in the taco seasoning and water. Simmer for 5 minutes until thickened.
  4. Add the refried beans to the meat mixture and stir until well combined. Remove from heat.
  5. Spread a thin layer of enchilada sauce on the bottom of the baking dish.
  6. Place a tortilla in the dish, add a layer of the beef and bean mixture, sprinkle with cheese, then repeat layers until all ingredients are used, ending with cheese on top.
  7. Pour remaining enchilada sauce over the top and sprinkle with any remaining cheese.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes or until cheese is bubbly and golden.
  9. Let cool for 5 minutes before slicing. Serve with sour cream and garnish if desired.

Notes

  • Swap ground beef for ground turkey or chicken for a lighter version.
  • Add jalapeños, corn, or black beans to the meat mixture for extra flavor and texture.
  • This casserole can be made ahead and refrigerated or frozen before baking.
