Creamy Asian-style carbonara ramen made with silky noodles, parmesan cheese, eggs, mushrooms, and savory chicken for the ultimate comforting fusion dinner.


Ingredients

  • 2 packs instant ramen noodles, seasoning packets discarded
  • 2 boneless chicken breasts, thinly sliced
  • 2 large eggs
  • 1 cup freshly grated parmesan cheese
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 3 green onions, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon freshly cracked black pepper
  • 1/2 teaspoon salt

Instructions

  1. Bring a large pot of salted water to a boil and heat a large skillet over medium heat.
  2. Whisk together eggs, parmesan cheese, black pepper, soy sauce, and sesame oil in a bowl until smooth.
  3. Add olive oil to the skillet and cook the sliced chicken until golden and fully cooked.
  4. Add mushrooms and garlic to the skillet and sauté until tender and fragrant.
  5. Cook ramen noodles according to package instructions and reserve 1/2 cup noodle water before draining.
  6. Remove skillet from direct heat and add the hot noodles.
  7. Slowly toss noodles with the egg and parmesan mixture while adding small splashes of reserved noodle water until creamy.
  8. Stir in sliced green onions and serve immediately with extra parmesan and black pepper if desired.

  • Use freshly grated parmesan cheese for the smoothest sauce texture.
  • Remove the pan from heat before adding eggs to avoid scrambling.
