- 2 packs instant ramen noodles, seasoning packets discarded
- 2 boneless chicken breasts, thinly sliced
- 2 large eggs
- 1 cup freshly grated parmesan cheese
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 3 green onions, sliced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon olive oil
- 1 teaspoon freshly cracked black pepper
- 1/2 teaspoon salt
Instructions
- Bring a large pot of salted water to a boil and heat a large skillet over medium heat.
- Whisk together eggs, parmesan cheese, black pepper, soy sauce, and sesame oil in a bowl until smooth.
- Add olive oil to the skillet and cook the sliced chicken until golden and fully cooked.
- Add mushrooms and garlic to the skillet and sauté until tender and fragrant.
- Cook ramen noodles according to package instructions and reserve 1/2 cup noodle water before draining.
- Remove skillet from direct heat and add the hot noodles.
- Slowly toss noodles with the egg and parmesan mixture while adding small splashes of reserved noodle water until creamy.
- Stir in sliced green onions and serve immediately with extra parmesan and black pepper if desired.
Notes
- Use freshly grated parmesan cheese for the smoothest sauce texture.
- Remove the pan from heat before adding eggs to avoid scrambling.
