- 1 cup sour cream
- 1 can (10.5 oz) cream of mushroom or cream of chicken soup
- 1 cup shredded cheddar cheese
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper, to taste
- 1 box (6 oz) stuffing mix (e.g., Stove Top)
- ¼ cup unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch or similar baking dish.
- In a large bowl, mix zucchini, cooked rice, sour cream, cream of soup, cheese, garlic powder, onion powder, salt, and pepper until well combined.
- Spread the mixture evenly into the prepared baking dish.
- In a separate bowl, mix stuffing mix with melted butter until the crumbs are coated.
- Sprinkle the buttery stuffing evenly over the top of the casserole.
- Bake for 30–35 minutes, or until hot and bubbly and the top is golden brown.
- Let cool slightly before serving.
