Description

Ingredients

  • 2 medium zucchini, grated
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 1 tablespoon olive oil
  • 2 small fresh tomatoes, sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 200°C and line a baking sheet with parchment paper.
  2. In a bowl, combine grated zucchini, mozzarella, parmesan, eggs, flour, olive oil, salt, and pepper until well mixed.
  3. Spread the mixture evenly onto the prepared baking sheet, shaping it into a round crust.
  4. Bake the crust until it begins to set and lightly golden.
  5. Remove from the oven and top with sliced tomatoes and dried oregano.
  6. Return to the oven and bake until the edges are golden and the cheese is melted.
