Description

Ingredients

  • 6 chicken thighs (about 800 grams)
  • 1.5 cups long grain rice, uncooked
  • 2 lemons, juiced and sliced
  • 4 garlic cloves, whole
  • 3 cups chicken broth
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken with salt, pepper, and oregano.
  3. Sear chicken until lightly golden on both sides.
  4. Add garlic, rice, chicken broth, and lemon juice, then stir gently.
  5. Cover and simmer on low heat for 25 to 30 minutes until rice is tender and liquid is absorbed.
  6. Add lemon slices and sprinkle fresh parsley on top.
  7. Fluff rice gently and serve warm.
