Description
White Chicken Lasagna Soup is a rich and creamy one-pot soup inspired by classic white chicken lasagna. It’s loaded with tender chicken, lasagna noodles, spinach, and a cheesy, garlic-infused broth that’s both comforting and satisfying.

- 1 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 cups cooked, shredded chicken
- 6 cups chicken broth
- 8 lasagna noodles, broken into pieces
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and cook until soft, about 3-4 minutes. Stir in garlic and cook for 1 more minute.
- Add the shredded chicken, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil.
- Once boiling, add broken lasagna noodles and reduce heat to a simmer. Cook for 10-12 minutes or until noodles are tender.
- Stir in spinach and let it wilt for 2-3 minutes.
- Add heavy cream, mozzarella, and Parmesan. Stir until cheese is melted and soup is creamy.
- For a thicker soup, mix cornstarch with water and stir into the soup. Simmer for another 2-3 minutes until thickened.
- Serve hot, optionally topped with extra cheese or fresh herbs.
Notes
- Use rotisserie chicken to save time.
- You can substitute heavy cream with half-and-half for a lighter version.
- Store leftovers in the fridge for up to 3 days. Reheat gently and add a splash of broth if needed.
