Instructions
- Place the watermelon cubes in a blender and blend until completely smooth.
- Strain the juice through a fine mesh sieve or cheesecloth into a large saucepan to remove pulp.
- Bring the watermelon juice to a boil over medium-high heat, then reduce the heat to low and simmer uncovered for 1.5 to 2 hours, stirring occasionally.
- Continue simmering until the liquid reduces to a thick, syrupy consistency (about 1 to 1.5 cups).
- Allow it to cool, then transfer to a clean glass jar or bottle. Store in the refrigerator for up to 1 month.
