Description

A light and refreshing summer salad combining sweet watermelon, crisp cucumber, fresh mint, and salty feta with a zesty lime-olive oil dressing.


Ingredients

  • 4 cups seedless watermelon, cubed
  • 2 cups cucumber, cubed (English cucumber preferred)
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice (or lemon juice)
  • Pinch of salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine watermelon cubes, cucumber cubes, and chopped mint.
  2. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  3. Pour dressing over the watermelon mixture and gently toss to combine.
  4. Sprinkle with crumbled feta just before serving.
