Description
Warm and Sweet Blackberry Cobbler is a classic comfort dessert featuring juicy blackberries baked under a golden, buttery biscuit topping. Best served fresh out of the oven with a scoop of vanilla ice cream.
Ingredients
Scale
- 4 cups fresh or frozen blackberries
- 3/4 cup granulated sugar (divided)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, melted
- 3/4 cup milk
- Optional: additional sugar for sprinkling on top
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch square baking dish or similar-sized oven-safe dish.
- In a medium bowl, mix blackberries with 1/2 cup sugar, lemon juice, and vanilla extract. Set aside to macerate while you prepare the batter.
- In a separate bowl, whisk together flour, remaining 1/4 cup sugar, baking powder, and salt. Add in milk and melted butter, stirring until combined and a thick batter forms.
- Pour batter evenly into the greased baking dish. Do not stir.
- Spoon the blackberry mixture evenly over the top of the batter. Again, do not stir—batter will rise around the berries as it bakes.
- Optional: sprinkle a tablespoon of sugar over the top for a golden, crisp finish.
- Bake for 40–45 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool for 10–15 minutes. Serve warm, optionally with vanilla ice cream or whipped cream.
Notes
- Frozen blackberries can be used—no need to thaw, just add an extra 5 minutes to baking time.
- Substitute part of the blackberries with blueberries or raspberries for variety.
- Leftovers can be stored in the fridge for up to 3 days and reheated gently.
- For a crispier top, bake in a cast-iron skillet.
