Description

Warm and Sweet Blackberry Cobbler is a classic comfort dessert featuring juicy blackberries baked under a golden, buttery biscuit topping. Best served fresh out of the oven with a scoop of vanilla ice cream.


Ingredients

  • 4 cups fresh or frozen blackberries
  • 3/4 cup granulated sugar (divided)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup milk
  • Optional: additional sugar for sprinkling on top

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch square baking dish or similar-sized oven-safe dish.
  2. In a medium bowl, mix blackberries with 1/2 cup sugar, lemon juice, and vanilla extract. Set aside to macerate while you prepare the batter.
  3. In a separate bowl, whisk together flour, remaining 1/4 cup sugar, baking powder, and salt. Add in milk and melted butter, stirring until combined and a thick batter forms.
  4. Pour batter evenly into the greased baking dish. Do not stir.
  5. Spoon the blackberry mixture evenly over the top of the batter. Again, do not stir—batter will rise around the berries as it bakes.
  6. Optional: sprinkle a tablespoon of sugar over the top for a golden, crisp finish.
  7. Bake for 40–45 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let cool for 10–15 minutes. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

  • Frozen blackberries can be used—no need to thaw, just add an extra 5 minutes to baking time.
  • Substitute part of the blackberries with blueberries or raspberries for variety.
  • Leftovers can be stored in the fridge for up to 3 days and reheated gently.
  • For a crispier top, bake in a cast-iron skillet.
