Description

Virginia’s Fresh Apple Cake is a timeless, moist, and hearty cake packed with chopped apples, warm spices, and crunchy pecans. This old-fashioned favorite is perfect for fall and is delicious served warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.


Ingredients

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 1/2 cups vegetable oil
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 3 cups peeled, chopped apples (Granny Smith or Honeycrisp)
  • 1 cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a Bundt pan or 9×13-inch baking dish.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together oil, eggs, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring just until combined.
  5. Fold in the chopped apples and nuts until evenly distributed.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10–15 minutes before removing to a wire rack to cool completely.

  • Great with a dusting of powdered sugar, cream cheese frosting, or caramel glaze.
  • Use a mix of tart and sweet apples for deeper flavor.
