Virginia’s Fresh Apple Cake is a timeless, moist, and hearty cake packed with chopped apples, warm spices, and crunchy pecans. This old-fashioned favorite is perfect for fall and is delicious served warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.

- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 1/2 cups vegetable oil
- 3 large eggs
- 1 tbsp vanilla extract
- 3 cups peeled, chopped apples (Granny Smith or Honeycrisp)
- 1 cup chopped pecans or walnuts
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a Bundt pan or 9×13-inch baking dish.
- In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together oil, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring just until combined.
- Fold in the chopped apples and nuts until evenly distributed.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10–15 minutes before removing to a wire rack to cool completely.
Notes
- Great with a dusting of powdered sugar, cream cheese frosting, or caramel glaze.
- Use a mix of tart and sweet apples for deeper flavor.
