- 1 bag (10–12 oz) tortilla chips
- 1 lb ground beef
- 1 packet taco seasoning mix
- 2/3 cup water
- 2 cups shredded cheddar or Mexican blend cheese
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup canned or frozen corn, drained
- 1/2 cup diced red onion
- 1 cup diced tomatoes
- 1/2 cup sliced black olives (optional)
- 1 jalapeño, sliced (optional)
- 1 avocado or guacamole
- 1/2 cup sour cream
- Fresh cilantro, chopped (for garnish)
- Lime wedges (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with foil or parchment paper.
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add taco seasoning and water to the beef. Simmer for 5–7 minutes until thickened. Remove from heat.
- Spread half the tortilla chips on the prepared baking sheet. Layer with half of the seasoned beef, black beans, corn, onions, and cheese.
- Repeat with remaining chips, beef, beans, corn, onions, and cheese.
- Bake in the preheated oven for 8–10 minutes, or until cheese is fully melted.
- Remove from oven and top with diced tomatoes, olives, jalapeños, avocado or guacamole, sour cream, and chopped cilantro.
- Serve immediately with lime wedges on the side if desired.
Notes
- Customize with shredded chicken, pulled pork, or ground turkey.
- Make it vegetarian by skipping the meat and adding more beans or grilled veggies.
- For individual servings, build nachos in mini cast-iron pans or ramekins.
