- 1½ pounds beef sirloin or flank steak, cut into 1½-inch cubes
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 2 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1½ teaspoons smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 large red bell pepper, cut into chunks
- 1 large red onion, cut into wedges
- 8 small flour tortillas
- ¼ cup fresh cilantro, chopped
- ½ cup yogurt or sour cream
Instructions
- Preheat the grill to medium-high or heat a grill pan on the stove.
- In a large bowl, whisk together olive oil, lemon juice, garlic, cumin, paprika, salt, and pepper.
- Add beef cubes to the marinade and mix well. Cover and refrigerate for at least 1 hour or overnight.
- Thread beef, bell peppers, and onions onto skewers. Lightly oil the grill or pan.
- Grill skewers for 8–10 minutes, turning occasionally, until beef is browned and veggies are tender.
- Warm tortillas in a skillet for 20 seconds per side.
- Remove beef and veggies from skewers and assemble in tortillas.
- Top with yogurt or sour cream and chopped cilantro. Serve warm.
Notes
- Soak wooden skewers in water for 30 minutes before grilling.
- Rest beef for a few minutes after grilling for juicier texture.
- Use metal skewers for ease and reusability.
