- 8 ounces dry pasta
- 1 pound steak (sirloin or ribeye), cut into 1-inch cubes
- 4 tablespoons unsalted butter
- 4 cloves garlic, finely minced
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 1 teaspoon salt, plus more for pasta water
- 1/2 teaspoon black pepper, freshly ground
- 2 tablespoons fresh parsley, chopped
- 1/4 cup grated parmesan cheese
Instructions
- Bring a large pot of salted water to a boil and heat a skillet over medium-high heat.
- Toss steak cubes with olive oil, salt, and pepper in a bowl.
- Add steak to the hot skillet in batches and sear for 2–3 minutes per side. Remove and set aside.
- In the same skillet, melt butter. Add garlic and sauté for 30 seconds.
- Add cherry tomatoes and cook until they begin to burst, about 4 minutes.
- Meanwhile, cook pasta until al dente. Reserve 1/2 cup of pasta water and then drain.
- Add the drained pasta to the skillet, followed by steak bites. Toss everything together to coat.
- If needed, add reserved pasta water to loosen the sauce.
- Sprinkle with grated parmesan and chopped parsley. Toss once more and serve immediately.

- Let the steak rest before slicing to keep it juicy.
- Don’t overcook the garlic to avoid bitterness.
- Use real butter for a rich, flavorful base.
- Add chili flakes for a spicy version.
