- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup packed brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup toffee bits
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, melt the butter. Stir in brown sugar until smooth.
- Add the egg and vanilla extract. Whisk until glossy.
- Fold in flour, baking powder, and salt just until combined.
- Mix in the toffee bits.
- Spread batter evenly in prepared pan.
- Bake for 22 to 26 minutes until the edges are golden and center is set.
- Let cool before slicing into bars.
Notes
- Do not overmix the batter to keep blondies tender.
- For gooier bars, bake until just set in the center.
- Optional: sprinkle flaky sea salt on top before baking.
