Description

Tiramisu Cupcakes are a delightful twist on the classic Italian dessert, featuring espresso-soaked vanilla cupcakes topped with a rich mascarpone frosting and a dusting of cocoa powder.


Ingredients

  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/4 cup brewed espresso or strong coffee (for soaking)
  • 2 tablespoons coffee liqueur (optional)
  • 8 oz mascarpone cheese
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for frosting)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add vanilla extract.
  4. Alternate adding dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
  5. Divide the batter among cupcake liners and bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  6. Combine brewed espresso and coffee liqueur (if using). Poke holes in the cooled cupcakes with a skewer and spoon the mixture over each cupcake (about 1 teaspoon per cupcake).
  7. In a bowl, beat mascarpone, heavy cream, powdered sugar, and vanilla until thick and fluffy.
  8. Pipe or spread the mascarpone frosting onto cupcakes. Dust with cocoa powder before serving.

Notes

  • For a non-alcoholic version, omit the coffee liqueur.
  • Chill the frosted cupcakes for 30 minutes for best texture and flavor.
  • Use store-bought or homemade espresso depending on your preference.
