- 2 large flour tortillas
- 1 cup shredded cheese (cheddar, Monterey Jack, or a mix)
- 1/4 cup chopped onions
- 1/4 cup chopped bell peppers (red, green, or yellow)
- 1/4 cup chopped zucchini or mushrooms
- 1/4 cup sweet corn (optional)
- 1 tablespoon olive oil or butter
- 1/2 teaspoon cumin powder
- Salt and pepper to taste
- Sour cream or salsa for serving (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Sauté onions, bell peppers, zucchini/mushrooms, and corn for 4–5 minutes until softened. Season with cumin, salt, and pepper.
- Place one tortilla on a clean surface. Sprinkle half the cheese evenly over it.
- Top with sautéed veggies, then the remaining cheese, and place the second tortilla on top.
- Heat a clean skillet over medium heat. Cook the quesadilla for 2–3 minutes on each side until golden brown and cheese is melted.
- Remove from heat, let cool slightly, then cut into wedges.
- Serve with salsa, sour cream, or guacamole if desired.
