Description

The Enchirito That Grandma Asked For Twice is a comforting, flavorful Tex-Mex dish combining a soft flour tortilla filled with seasoned ground beef, beans, and cheese, topped with enchilada sauce and baked to bubbly perfection. A nostalgic family favorite!

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1 can (15 oz) refried beans
  • 8 flour tortillas (6-inch size)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 1/2 cups red enchilada sauce
  • 1/4 cup sliced black olives (optional)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook ground beef with chopped onion and garlic until browned and cooked through. Drain excess fat.
  3. Add cumin, chili powder, paprika, salt, and pepper to the beef mixture. Stir well and cook for another 2 minutes.
  4. Warm the refried beans slightly to make spreading easier.
  5. Spoon about 2 tablespoons of refried beans onto each tortilla, then add a generous amount of the beef mixture and a sprinkle of both cheeses. Roll up each tortilla tightly and place seam-side down in a greased baking dish.
  6. Pour enchilada sauce evenly over the rolled tortillas and sprinkle with remaining cheese and olives if using.
  7. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
  8. Garnish with chopped cilantro before serving.

Notes

  • You can substitute ground turkey or chicken for a lighter option.
  • Add diced green chilies or jalapeños for extra heat.
  • Serve with sour cream and salsa on the side.
