Description

A light yet flavorful Thai-inspired soup featuring ground turkey, fragrant jasmine rice, and aromatic herbs in a soothing broth infused with ginger, garlic, and a hint of lime. A comforting and healthy meal perfect for any time of year.


Ingredients

  • 1 tbsp sesame oil or neutral oil
  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 6 cups chicken or turkey broth
  • 1/2 cup uncooked jasmine rice
  • 1 carrot, thinly sliced
  • 1 cup mushrooms, sliced (optional)
  • 1 tbsp lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 green onion, sliced
  • Salt and pepper to taste
  • Red chili flakes or sliced Thai chilies for heat (optional)

Instructions

  1. Heat oil in a large pot over medium heat. Add ground turkey and cook until browned, breaking it up as it cooks.
  2. Add onion, garlic, and ginger. Cook until onion is translucent, about 3–4 minutes.
  3. Stir in fish sauce and soy sauce, then add broth, jasmine rice, carrots, and mushrooms if using.
  4. Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until rice is tender.
  5. Season with salt, pepper, and lime juice to taste. Adjust heat with chili flakes or Thai chilies if desired.
  6. Stir in cilantro and green onions just before serving.
  7. Serve hot, garnished with extra herbs or lime wedges if desired.

Notes

  • Use leftover cooked rice to reduce simmer time—add it during the last 5 minutes.
  • Swap turkey for ground chicken or tofu for variation.
  • Add a splash of coconut milk for a creamier texture.
