- 1 tbsp sesame oil or neutral oil
- 1 lb ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 6 cups chicken or turkey broth
- 1/2 cup uncooked jasmine rice
- 1 carrot, thinly sliced
- 1 cup mushrooms, sliced (optional)
- 1 tbsp lime juice
- 1/4 cup fresh cilantro, chopped
- 1 green onion, sliced
- Salt and pepper to taste
- Red chili flakes or sliced Thai chilies for heat (optional)
Instructions
- Heat oil in a large pot over medium heat. Add ground turkey and cook until browned, breaking it up as it cooks.
- Add onion, garlic, and ginger. Cook until onion is translucent, about 3–4 minutes.
- Stir in fish sauce and soy sauce, then add broth, jasmine rice, carrots, and mushrooms if using.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until rice is tender.
- Season with salt, pepper, and lime juice to taste. Adjust heat with chili flakes or Thai chilies if desired.
- Stir in cilantro and green onions just before serving.
- Serve hot, garnished with extra herbs or lime wedges if desired.
Notes
- Use leftover cooked rice to reduce simmer time—add it during the last 5 minutes.
- Swap turkey for ground chicken or tofu for variation.
- Add a splash of coconut milk for a creamier texture.
