- 1.5 pounds chicken thighs (boneless, skinless)
- 1 cup coconut milk
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons curry powder
- 1/2 cup creamy peanut butter
- Juice of 1 lime
- Wooden skewers, as needed
Instructions
- In a bowl, whisk together coconut milk, soy sauce, brown sugar, garlic, ginger, and curry powder. Add chicken and marinate for at least 30 minutes or overnight.
- If using wooden skewers, soak them in water for 30 minutes. Thread the marinated chicken onto skewers.
- Preheat a grill or grill pan over medium-high heat. Lightly oil the surface to prevent sticking.
- Grill the skewers for 3–4 minutes per side, until cooked through and nicely charred.
- In a small saucepan, combine peanut butter, lime juice, a splash of coconut milk, and a bit of brown sugar. Simmer over low heat until smooth and warm.
- Serve the chicken satay over rice or with flatbread, drizzled or dipped in peanut sauce.
Notes
- Marinate overnight for deeper flavor.
- Use metal skewers to skip soaking time.
- Peanut sauce can be made ahead and stored for 4 days.
