Description

Chicken Taco Casserole is a flavorful, family-friendly dish that layers seasoned chicken, tortillas, beans, cheese, and taco toppings into a hearty and comforting meal. Perfect for weeknight dinners or potlucks.

  • 2 cups cooked shredded chicken
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained
  • 1 cup frozen corn
  • 1/2 cup salsa
  • 8 small corn or flour tortillas, cut into quarters
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream (optional, for serving)
  • Chopped fresh cilantro, green onions, or jalapeños (optional for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet, combine shredded chicken, taco seasoning, and water. Simmer for 3–5 minutes until the mixture is well combined and slightly thickened.
  3. In a large bowl, mix the seasoned chicken with black beans, tomatoes, corn, and salsa.
  4. Layer half the tortilla pieces in the bottom of the baking dish. Spread half of the chicken mixture over the tortillas, then sprinkle with half of the cheese.
  5. Repeat the layers with remaining tortillas, chicken mixture, and cheese.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.
  7. Let stand 5 minutes before serving. Top with sour cream, cilantro, or green onions if desired.

Notes

  • You can substitute the chicken with ground beef or turkey if preferred.
  • Use low-fat cheese and sour cream for a lighter version.
