- 2 cups cooked shredded chicken
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained
- 1 cup frozen corn
- 1/2 cup salsa
- 8 small corn or flour tortillas, cut into quarters
- 2 cups shredded cheddar or Mexican blend cheese
- 1/2 cup sour cream (optional, for serving)
- Chopped fresh cilantro, green onions, or jalapeños (optional for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a skillet, combine shredded chicken, taco seasoning, and water. Simmer for 3–5 minutes until the mixture is well combined and slightly thickened.
- In a large bowl, mix the seasoned chicken with black beans, tomatoes, corn, and salsa.
- Layer half the tortilla pieces in the bottom of the baking dish. Spread half of the chicken mixture over the tortillas, then sprinkle with half of the cheese.
- Repeat the layers with remaining tortillas, chicken mixture, and cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.
- Let stand 5 minutes before serving. Top with sour cream, cilantro, or green onions if desired.
Notes
- You can substitute the chicken with ground beef or turkey if preferred.
- Use low-fat cheese and sour cream for a lighter version.
