Description

Taco Cups are a fun and easy way to enjoy tacos in a bite-sized form. Crispy tortilla cups are filled with seasoned ground beef, cheese, and your favorite taco toppings for a perfect party appetizer or a weeknight meal.


Ingredients

  • 12 small flour tortillas or corn tortillas
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream (optional)
  • 1/4 cup salsa (optional)
  • 1/4 cup sliced olives (optional)
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a muffin tin.
  2. Using a round cutter, cut the tortillas into smaller circles that will fit into the muffin tin cups. Press each circle into the muffin tin to form a cup shape.
  3. Brush the tortillas with a little olive oil and bake for 8–10 minutes, or until golden and crispy.
  4. While the tortilla cups are baking, cook the ground beef or turkey in a skillet over medium heat. Add the taco seasoning and water, stirring to combine. Simmer for 5–7 minutes, until the meat is fully cooked and seasoned.
  5. Once the tortilla cups are done, remove them from the oven and let them cool slightly.
  6. Fill each tortilla cup with the seasoned meat mixture, then top with shredded cheese. Return to the oven for 2-3 minutes to melt the cheese.
  7. Remove from the oven and garnish with shredded lettuce, diced tomatoes, sour cream, salsa, and olives as desired.
  8. Serve warm and enjoy!

Notes

  • For a vegetarian version, substitute the ground beef with black beans or a plant-based protein.
  • Make them spicier by adding jalapeños or hot sauce to the topping.
  • These can be prepared in advance and stored in the refrigerator, then re-heated before serving.
