Description

Stuffed Pepper Orzo Soup is a hearty, comforting soup inspired by classic stuffed peppers. Packed with ground beef, bell peppers, tomatoes, and orzo pasta, this soup is flavorful, filling, and perfect for a cozy dinner.

  • 1 tablespoon extra virgin olive oil
  • 1 pound ground beef
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 1 small green bell pepper, seeded, diced (about 1 cup)
  • 1 small red bell pepper, seeded, diced (about 1 cup)
  • 1 tablespoon garlic, minced
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) tomato sauce
  • 2 cups (16 ounces / 480 g) beef broth
  • 2 cups water
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup (236 g) orzo pasta, uncooked
  • Parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
  2. Add diced onion, green and red bell peppers, and garlic. Sauté for 5–7 minutes until vegetables are softened.
  3. Stir in diced tomatoes, tomato sauce, beef broth, water, Worcestershire sauce, salt, pepper, and Italian seasoning. Bring to a simmer.
  4. Once simmering, add uncooked orzo pasta and cook for 10–12 minutes, or until pasta is tender.
  5. Taste and adjust seasoning as needed.
  6. Ladle soup into bowls and garnish with chopped parsley before serving.

Notes

  • For extra flavor, use a mix of ground beef and Italian sausage.
  • Leftover soup can be stored in the refrigerator for up to 3 days and reheated gently.
  • For a vegetarian version, omit the beef and use vegetable broth with chickpeas or lentils instead.
  • Feel free to add a sprinkle of Parmesan cheese when serving for added richness.
