- 4 large bell peppers (any color), tops cut off and seeds removed
- 1 lb ground beef or turkey
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 cup tomato sauce
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella or cheddar cheese
- 2 tbsp olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté onions and garlic until softened.
- Add ground meat and cook until browned. Drain excess fat if necessary.
- Stir in tomato sauce, cooked rice, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Stuff each bell pepper with the mixture and place upright in a baking dish.
- Top each stuffed pepper with shredded cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake for another 10 minutes until cheese is golden and bubbly.
- Garnish with parsley and serve warm.

- Use quinoa or cauliflower rice as a low-carb alternative.
- Add chopped mushrooms, corn, or black beans to the filling for variety.
- Peppers can be blanched for 5 minutes before stuffing for softer texture.
