Description

Ingredients

  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 lb ground beef or turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 cup tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté onions and garlic until softened.
  3. Add ground meat and cook until browned. Drain excess fat if necessary.
  4. Stir in tomato sauce, cooked rice, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  5. Stuff each bell pepper with the mixture and place upright in a baking dish.
  6. Top each stuffed pepper with shredded cheese.
  7. Cover with foil and bake for 30 minutes. Remove foil and bake for another 10 minutes until cheese is golden and bubbly.
  8. Garnish with parsley and serve warm.

  • Use quinoa or cauliflower rice as a low-carb alternative.
  • Add chopped mushrooms, corn, or black beans to the filling for variety.
  • Peppers can be blanched for 5 minutes before stuffing for softer texture.
