Description

  • 2 cups rhubarb stalks, chopped
  • 1 puff pastry sheet, thawed
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

  • 1 egg
  • 1 tablespoon coarse sugar

Instructions

  1. Preheat your oven to 200°C and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine strawberries, rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix until evenly coated.
  3. Roll out the puff pastry sheet onto the prepared baking sheet, keeping it centered.
  4. Spoon the fruit mixture into the center of the pastry, leaving a border around the edges.
  5. Fold the edges of the pastry over the filling, creating a rustic shape.
  6. Beat the egg and brush it over the pastry edges, then sprinkle coarse sugar on top.
