Instructions
- Preheat your oven to 200°C and line a baking sheet with parchment paper.
- In a mixing bowl, combine strawberries, rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix until evenly coated.
- Roll out the puff pastry sheet onto the prepared baking sheet, keeping it centered.
- Spoon the fruit mixture into the center of the pastry, leaving a border around the edges.
- Fold the edges of the pastry over the filling, creating a rustic shape.
- Beat the egg and brush it over the pastry edges, then sprinkle coarse sugar on top.
- Bake for 25 minutes or until the pastry is golden and the filling is bubbling.
