Description
A rustic strawberry mascarpone galette with a flaky golden crust, creamy mascarpone filling, and sweet juicy strawberries baked until bubbling and fragrant.

- 1 1/4 cups all purpose flour
- 1/2 cup cold unsalted butter, cubed
- 1/4 teaspoon salt
- 3 to 4 tablespoons ice water
- 1/2 cup mascarpone cheese
- 1 teaspoon vanilla extract
- 3 tablespoons granulated sugar, divided
- 2 cups fresh strawberries, hulled and halved
- 1 tablespoon cornstarch
- 1 teaspoon lemon zest
- 1 egg yolk mixed with 1 teaspoon water for egg wash
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Combine the flour and salt, then cut in the cold butter until pea sized crumbs form. Add ice water as needed until the dough comes together. Chill for 30 minutes.
- Mix mascarpone, vanilla, and 1 tablespoon sugar until smooth. In another bowl, toss strawberries with cornstarch, lemon zest, and 1 tablespoon sugar.
- Roll out the chilled dough on a floured surface into a 12 inch circle and transfer to the baking sheet.
- Spread the mascarpone mixture in the center, leaving a border. Add the strawberries on top, then fold the edges of the dough over the filling.
- Brush the crust with egg wash and sprinkle the remaining sugar on the edges. Bake for 35 to 40 minutes until golden and bubbling.
- Cool slightly before slicing and serve warm or at room temperature.
Notes
- Use cold butter for the flakiest crust.
- Let the galette cool so the filling sets properly.
- Fresh ripe strawberries give the best flavor and color.
