Description

A rustic strawberry mascarpone galette with a flaky golden crust, creamy mascarpone filling, and sweet juicy strawberries baked until bubbling and fragrant.


Ingredients

  • 1 1/4 cups all purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 teaspoon salt
  • 3 to 4 tablespoons ice water
  • 1/2 cup mascarpone cheese
  • 1 teaspoon vanilla extract
  • 3 tablespoons granulated sugar, divided
  • 2 cups fresh strawberries, hulled and halved
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1 egg yolk mixed with 1 teaspoon water for egg wash

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Combine the flour and salt, then cut in the cold butter until pea sized crumbs form. Add ice water as needed until the dough comes together. Chill for 30 minutes.
  3. Mix mascarpone, vanilla, and 1 tablespoon sugar until smooth. In another bowl, toss strawberries with cornstarch, lemon zest, and 1 tablespoon sugar.
  4. Roll out the chilled dough on a floured surface into a 12 inch circle and transfer to the baking sheet.
  5. Spread the mascarpone mixture in the center, leaving a border. Add the strawberries on top, then fold the edges of the dough over the filling.
  6. Brush the crust with egg wash and sprinkle the remaining sugar on the edges. Bake for 35 to 40 minutes until golden and bubbling.
  7. Cool slightly before slicing and serve warm or at room temperature.

Notes

  • Use cold butter for the flakiest crust.
  • Let the galette cool so the filling sets properly.
  • Fresh ripe strawberries give the best flavor and color.
