  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups chopped fresh strawberries
  • 1 tablespoon flour (to toss strawberries)
  • Powdered sugar or glaze for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each. Stir in lemon zest, lemon juice, and vanilla extract.
  5. Alternately add the dry ingredients and buttermilk to the wet mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Toss chopped strawberries with 1 tablespoon of flour, then gently fold into the batter.
  7. Pour batter into prepared pan and spread evenly.
  8. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar or drizzle with glaze if desired.

Notes

  • Use ripe, sweet strawberries for the best flavor.
  • For extra tang, add a lemon glaze made with lemon juice and powdered sugar.
