Strawberry Éclair Cake is a no-bake dessert made with layers of graham crackers, creamy vanilla pudding, whipped topping, and fresh strawberries — all topped with a rich strawberry glaze for a refreshing and indulgent treat.

- 1 box (3.4 oz) instant vanilla pudding mix
- 1 1/2 cups cold milk
- 1 tub (8 oz) whipped topping (like Cool Whip), thawed
- 1 box graham crackers
- 2 cups fresh strawberries, sliced
- 1/2 cup strawberry jam or preserves
- 1 tbsp water
Instructions
- In a mixing bowl, whisk together pudding mix and cold milk until thickened (about 2 minutes).
- Fold in whipped topping until smooth and combined.
- In a 9×13-inch baking dish, arrange a single layer of graham crackers to cover the bottom.
- Spread half of the pudding mixture over the crackers, then top with a layer of sliced strawberries.
- Add another layer of graham crackers, then the remaining pudding mixture, and another layer of strawberries.
- In a small bowl, microwave the strawberry jam with 1 tbsp water for 20–30 seconds, then stir until smooth. Drizzle over the top layer.
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow crackers to soften and flavors to meld.
Notes
- Use sugar-free pudding and light whipped topping for a lighter version.
- For extra flavor, add a layer of cream cheese to the pudding mix.
- Best served chilled and within 2 days for freshness.
