Description

Steak & Shrimp Quesadillas are loaded with juicy marinated steak, tender shrimp, melty cheese, and sautéed veggies all grilled in a crispy tortilla. A surf-and-turf twist on a Tex-Mex favorite—perfect for lunch, dinner, or game day snacking.


Ingredients

  • 1/2 lb flank steak or sirloin, thinly sliced
  • 1/2 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup sliced bell peppers (any color)
  • 1/2 cup sliced onion
  • 1 tablespoon butter (for cooking)
  • 1 1/2 cups shredded Mexican blend or cheddar cheese
  • 4 large flour tortillas
  • Sour cream, guacamole, or salsa for serving (optional)

Instructions

  1. In a medium bowl, combine steak and shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Let marinate for 15–30 minutes.
  2. Heat a skillet over medium-high heat. Cook the marinated steak for 2–3 minutes per side until browned and cooked through. Remove and set aside.
  3. In the same skillet, cook the shrimp until pink and opaque, about 2 minutes per side. Remove and set aside.
  4. Reduce heat to medium. Add butter, then sauté sliced bell peppers and onions until softened, about 5 minutes. Remove from heat.
  5. To assemble the quesadillas, place one tortilla in a clean skillet over medium heat. Sprinkle cheese over one half, then layer steak, shrimp, and vegetables. Top with more cheese and fold the tortilla over.
  6. Cook for 2–3 minutes per side, pressing lightly, until the tortilla is golden and the cheese is melted.
  7. Repeat with remaining tortillas and filling.
  8. Slice into wedges and serve warm with your favorite dips.

Notes

  • Use pre-cooked shrimp to save time—just warm them through.
  • Add jalapeños for a spicy kick or mushrooms for extra umami.
  • These quesadillas reheat well on a skillet or in an air fryer.
