Description
Steak & Shrimp Quesadillas are loaded with juicy marinated steak, tender shrimp, melty cheese, and sautéed veggies all grilled in a crispy tortilla. A surf-and-turf twist on a Tex-Mex favorite—perfect for lunch, dinner, or game day snacking.

- 1/2 lb flank steak or sirloin, thinly sliced
- 1/2 lb shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup sliced bell peppers (any color)
- 1/2 cup sliced onion
- 1 tablespoon butter (for cooking)
- 1 1/2 cups shredded Mexican blend or cheddar cheese
- 4 large flour tortillas
- Sour cream, guacamole, or salsa for serving (optional)
Instructions
- In a medium bowl, combine steak and shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Let marinate for 15–30 minutes.
- Heat a skillet over medium-high heat. Cook the marinated steak for 2–3 minutes per side until browned and cooked through. Remove and set aside.
- In the same skillet, cook the shrimp until pink and opaque, about 2 minutes per side. Remove and set aside.
- Reduce heat to medium. Add butter, then sauté sliced bell peppers and onions until softened, about 5 minutes. Remove from heat.
- To assemble the quesadillas, place one tortilla in a clean skillet over medium heat. Sprinkle cheese over one half, then layer steak, shrimp, and vegetables. Top with more cheese and fold the tortilla over.
- Cook for 2–3 minutes per side, pressing lightly, until the tortilla is golden and the cheese is melted.
- Repeat with remaining tortillas and filling.
- Slice into wedges and serve warm with your favorite dips.
Notes
- Use pre-cooked shrimp to save time—just warm them through.
- Add jalapeños for a spicy kick or mushrooms for extra umami.
- These quesadillas reheat well on a skillet or in an air fryer.
