Description

Tender beef cubes seared to perfection and simmered in a rich, onion-infused jus, perfect over mashed potatoes or rice for a cozy, satisfying meal.


Ingredients

  • 1.5 pounds cubed beef (sirloin or stew meat)
  • 2 large yellow onions, thinly sliced
  • 3 garlic cloves, minced
  • 1 ½ cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch (mixed with 2 tablespoons water)
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Toss beef cubes with salt and pepper to season.
  3. Add olive oil to the hot pan and sear beef in batches for 2-3 minutes per side. Remove and set aside.
  4. Lower heat to medium, add butter, and stir in onions. Cook for 15-20 minutes until golden and caramelized.
  5. Add garlic and cook for 1 more minute.
  6. Pour in beef broth, Worcestershire sauce, and soy sauce. Scrape up browned bits from the pan.
  7. Return beef to the pan and simmer for 10 minutes.
  8. Stir in cornstarch slurry and cook until the jus thickens.
  9. Adjust seasoning to taste and serve warm over your favorite base.

Notes

  • Don’t overcrowd the pan when searing beef to ensure a good crust.
  • Let the onions caramelize slowly for the best flavor.
  • Can be made ahead and reheated — the flavors get even better.
