- 1.5 pounds cubed beef (sirloin or stew meat)
- 2 large yellow onions, thinly sliced
- 3 garlic cloves, minced
- 1 ½ cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 tablespoon cornstarch (mixed with 2 tablespoons water)
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Heat a large skillet over medium-high heat.
- Toss beef cubes with salt and pepper to season.
- Add olive oil to the hot pan and sear beef in batches for 2-3 minutes per side. Remove and set aside.
- Lower heat to medium, add butter, and stir in onions. Cook for 15-20 minutes until golden and caramelized.
- Add garlic and cook for 1 more minute.
- Pour in beef broth, Worcestershire sauce, and soy sauce. Scrape up browned bits from the pan.
- Return beef to the pan and simmer for 10 minutes.
- Stir in cornstarch slurry and cook until the jus thickens.
- Adjust seasoning to taste and serve warm over your favorite base.
Notes
- Don’t overcrowd the pan when searing beef to ensure a good crust.
- Let the onions caramelize slowly for the best flavor.
- Can be made ahead and reheated — the flavors get even better.
