Starbucks Copycat Egg Bites are soft, fluffy, and protein-packed bites made with egg whites, cottage cheese, and your choice of vegetables and cheese. Perfect for a quick breakfast or healthy snack.

- 6 egg whites
- ¼ cup cottage cheese
- 1 clove garlic, minced
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ¼ cup roasted red bell peppers, diced
- 4 ounces Monterey Jack cheese, shredded
- 1 cup spinach
- Green onions, diced, for garnish
Instructions
- Preheat oven to 300°F (150°C) and lightly grease a muffin tin or use silicone molds.
- In a blender, combine egg whites, cottage cheese, minced garlic, salt, and garlic powder. Blend until smooth and frothy.
- Stir in diced roasted red bell peppers, shredded Monterey Jack cheese, and spinach.
- Pour mixture evenly into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 25-30 minutes, or until egg bites are set and lightly golden on top.
- Remove from oven and let cool slightly before removing from the tin.
- Garnish with diced green onions before serving.
Notes
- Egg bites can be stored in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in the microwave or steam to maintain softness.
- Optional: add cooked bacon, ham, or other vegetables for variety.
