Description

Starbucks Copycat Egg Bites are soft, fluffy, and protein-packed bites made with egg whites, cottage cheese, and your choice of vegetables and cheese. Perfect for a quick breakfast or healthy snack.


Ingredients

  • 6 egg whites
  • ¼ cup cottage cheese
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ cup roasted red bell peppers, diced
  • 4 ounces Monterey Jack cheese, shredded
  • 1 cup spinach
  • Green onions, diced, for garnish

Instructions

  1. Preheat oven to 300°F (150°C) and lightly grease a muffin tin or use silicone molds.
  2. In a blender, combine egg whites, cottage cheese, minced garlic, salt, and garlic powder. Blend until smooth and frothy.
  3. Stir in diced roasted red bell peppers, shredded Monterey Jack cheese, and spinach.
  4. Pour mixture evenly into the prepared muffin tin, filling each cup about ¾ full.
  5. Bake for 25-30 minutes, or until egg bites are set and lightly golden on top.
  6. Remove from oven and let cool slightly before removing from the tin.
  7. Garnish with diced green onions before serving.
