Description

These Spinach Ricotta Bites are crispy on the outside and creamy on the inside, packed with cheesy flavor and earthy spinach. Perfect as a snack, appetizer, or party finger food.


Ingredients

  • 1 cup Ricotta Cheese
  • 1 cup Frozen Spinach (thawed and well-drained)
  • 1/2 cup Parmesan Cheese, grated
  • 1/2 cup Mozzarella Cheese, shredded
  • 3/4 cup Breadcrumbs
  • 1 large Egg
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • Olive Oil Spray, as needed

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the ricotta, spinach, mozzarella, parmesan, breadcrumbs, egg, garlic powder, salt, and pepper until fully combined.
  3. Lightly spray the lined baking sheet with olive oil spray.
  4. Form tablespoon-sized balls from the mixture and place them on the baking sheet.
  5. Lightly spray the tops with olive oil spray and bake for 20 to 25 minutes until golden.
  6. Let cool for a few minutes before serving with your favorite dipping sauce.
