Description

Spinach and Cheese Casserole is a comforting, hearty dish featuring tender spinach mixed with a rich blend of cheeses and baked until golden and bubbly. Perfect as a side dish or a vegetarian main, it’s ideal for holidays, potlucks, or everyday dinners.

  • 2 (10 oz) packages frozen chopped spinach, thawed and well-drained
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 3 large eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tbsp olive oil or melted butter (for greasing dish)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch or similar-sized baking dish with olive oil or butter.
  2. In a large mixing bowl, combine spinach, cottage cheese, mozzarella, Parmesan, and sour cream.
  3. In a separate bowl, whisk eggs with salt, pepper, garlic powder, and onion powder. Pour into the spinach mixture and stir until fully combined.
  4. Transfer the mixture into the prepared baking dish and spread evenly.
  5. Bake for 35–40 minutes, or until the casserole is set and the top is lightly golden.
  6. Let cool for 5–10 minutes before serving.

Notes

  • Make sure to squeeze out all excess moisture from the spinach to avoid a soggy casserole.
  • Use fresh spinach (sautéed and drained) as a substitute for frozen if desired.
  • Add a pinch of nutmeg for a classic flavor boost.
  • Leftovers can be refrigerated and reheated for up to 3 days.
