- 2 (10 oz) packages frozen chopped spinach, thawed and well-drained
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup sour cream
- 3 large eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 tbsp olive oil or melted butter (for greasing dish)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch or similar-sized baking dish with olive oil or butter.
- In a large mixing bowl, combine spinach, cottage cheese, mozzarella, Parmesan, and sour cream.
- In a separate bowl, whisk eggs with salt, pepper, garlic powder, and onion powder. Pour into the spinach mixture and stir until fully combined.
- Transfer the mixture into the prepared baking dish and spread evenly.
- Bake for 35–40 minutes, or until the casserole is set and the top is lightly golden.
- Let cool for 5–10 minutes before serving.
Notes
- Make sure to squeeze out all excess moisture from the spinach to avoid a soggy casserole.
- Use fresh spinach (sautéed and drained) as a substitute for frozen if desired.
- Add a pinch of nutmeg for a classic flavor boost.
- Leftovers can be refrigerated and reheated for up to 3 days.
