- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber slices
- 1/2 avocado, diced
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- 2 tablespoons Greek yogurt or sour cream (optional, for dressing)
Instructions
- In a bowl, toss shrimp with olive oil, chili powder, paprika, cayenne (if using), garlic powder, salt, and pepper until evenly coated.
- Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes per side or until pink and cooked through. Set aside.
- In a large salad bowl, arrange salad greens, cherry tomatoes, cucumber, avocado, red onion, and cilantro.
- Top with the cooked shrimp.
- Drizzle with lime juice and Greek yogurt (if using) before serving.
Notes
