- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups shredded cheddar cheese, divided
- 8 oz cream cheese, softened
- 1 cup milk
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 slices of bread (for grilled cheese dippers)
- Butter for grilling
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onion, garlic, and diced jalapeños until softened, about 5 minutes.
- Add broth and bring to a simmer.
- In a bowl, whisk together cream cheese, milk, and 1 cup shredded cheddar until smooth.
- Slowly stir the cream cheese mixture into the simmering broth until well combined.
- Season soup with salt and pepper to taste, then simmer for 10 minutes, stirring occasionally.
- While soup simmers, prepare grilled cheese dippers by buttering bread slices, layering with remaining cheddar, and grilling until golden and melted. Cut into sticks.
- Serve the soup hot with grilled cheese dippers on the side for dipping.
Notes
- Adjust the number of jalapeños to control spiciness.
- Add crispy bacon bits on top for extra flavor.
- Use pepper jack cheese instead of cheddar for an extra kick.
