- 2 tbsp olive oil or melted butter
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (adjust to taste)
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Juice of 1 lime
- 2 tbsp chopped cilantro (optional)
- Crumbled cotija cheese (optional for serving)
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix olive oil, chili powder, smoked paprika, cayenne pepper, garlic powder, salt, and pepper.
- Brush the corn evenly with the spicy mixture.
- Grill the corn for 10–12 minutes, turning occasionally until nicely charred and tender.
- Remove from grill, squeeze lime juice over the top, and sprinkle with chopped cilantro and cotija cheese if using.
- Serve hot and enjoy the kick!
Notes
- For extra smoky flavor, grill the corn directly in its husk for the first few minutes, then peel back to char.
