Description

Ingredients

  • 4 ears fresh corn, husked
  • 2 tbsp olive oil or melted butter
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (adjust to taste)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • 2 tbsp chopped cilantro (optional)
  • Crumbled cotija cheese (optional for serving)

Instructions

  1. Preheat grill to medium-high heat.
  2. In a small bowl, mix olive oil, chili powder, smoked paprika, cayenne pepper, garlic powder, salt, and pepper.
  3. Brush the corn evenly with the spicy mixture.
  4. Grill the corn for 10–12 minutes, turning occasionally until nicely charred and tender.
  5. Remove from grill, squeeze lime juice over the top, and sprinkle with chopped cilantro and cotija cheese if using.
