These Spiced Roasted Walnuts are sweet, smoky, and warmly spiced with cinnamon, ginger, and chipotle chile. Perfect as a snack, holiday treat, or crunchy topping for salads and desserts.

- 1 large egg white
- 1 tablespoon water
- 4 cups walnut halves
- 2 tablespoons pure maple syrup
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- ¾ teaspoon salt
- ½ teaspoon ground allspice
- ½ teaspoon ground chipotle chile
Instructions
- Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the egg white and water until frothy.
- Add the walnut halves and maple syrup, tossing until well coated.
- In a small bowl, combine cinnamon, ginger, salt, allspice, and chipotle chile.
- Sprinkle the spice mixture over the walnuts and stir to evenly coat.
- Spread the walnuts in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, stirring halfway through, until golden and fragrant.
- Allow to cool completely before serving or storing in an airtight container.
Notes
- Adjust spice level by adding more or less chipotle chile.
- Store in an airtight container at room temperature for up to 2 weeks.
