A bold, colorful salad featuring grilled chicken, avocado, black beans, and crisp veggies, all tossed in a smoky chipotle honey lime dressing. Perfect for a quick lunch or a vibrant dinner.

- 6 cups romaine lettuce, chopped
- 2 large grilled chicken breasts, sliced
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels, fresh or thawed
- 1 cup cherry tomatoes, halved
- 1 large avocado, diced
- 1 cup tortilla strips
- 1/2 cup cotija cheese, crumbled
- 1/4 cup freshly squeezed lime juice
- 1/4 cup olive oil
- 2 tablespoons honey
- 2 chipotle peppers in adobo, minced
- Salt and pepper, to taste
Instructions
- Preheat your grill or grill pan over medium-high heat.
- Blend chipotle peppers, lime juice, honey, olive oil, salt, and pepper until smooth to make the dressing.
- Grill chicken breasts for 5–6 minutes per side, then let rest and slice.
- In a large bowl, layer romaine, beans, corn, tomatoes, avocado, chicken, cotija, and tortilla strips.
- Toast tortilla strips if desired at 375°F for 8 minutes until golden.
- Drizzle dressing over salad and toss gently to coat.
- Serve immediately with extra cotija if desired.
Notes
- Add a pinch of cumin to the dressing for an earthy twist.
- Use grilled corn for extra smoky flavor.
- Chill the salad bowl before assembling for a crisp bite.
