- 1/2 cup unsalted butter (1 stick)
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- 4–5 ripe bananas, sliced
- 1/2 cup light brown sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Place butter in a 9×13-inch baking dish and put it in the oven to melt while it preheats.
- In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt.
- Stir in milk and vanilla extract until just combined.
- Once butter is melted, carefully remove the baking dish from the oven and pour the batter evenly over the butter—do not stir.
- In a skillet over medium heat, combine sliced bananas, brown sugar, and cinnamon. Cook for 3–4 minutes until bananas are coated and slightly caramelized.
- Spoon the banana mixture evenly over the batter. Again, do not stir.
- Bake for 40–45 minutes or until the cobbler is golden brown and set.
- Let cool slightly before serving. Delicious warm with vanilla ice cream or whipped cream.
Notes
- Use very ripe bananas for the best flavor and natural sweetness.
- Don’t stir the layers—this helps create that signature cobbler texture.
- Serve fresh or refrigerate leftovers and reheat before serving.
