  • 1/2 cup unsalted butter (1 stick)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 45 ripe bananas, sliced
  • 1/2 cup light brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Place butter in a 9×13-inch baking dish and put it in the oven to melt while it preheats.
  2. In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. Stir in milk and vanilla extract until just combined.
  4. Once butter is melted, carefully remove the baking dish from the oven and pour the batter evenly over the butter—do not stir.
  5. In a skillet over medium heat, combine sliced bananas, brown sugar, and cinnamon. Cook for 3–4 minutes until bananas are coated and slightly caramelized.
  6. Spoon the banana mixture evenly over the batter. Again, do not stir.
  7. Bake for 40–45 minutes or until the cobbler is golden brown and set.
  8. Let cool slightly before serving. Delicious warm with vanilla ice cream or whipped cream.

Notes

  • Use very ripe bananas for the best flavor and natural sweetness.
  • Don’t stir the layers—this helps create that signature cobbler texture.
