Description

A crisp chickpea flatbread topped with creamy whipped feta and juicy cherry tomato salad. This Mediterranean-inspired dish is fresh, flavorful, and perfect for any meal.


Ingredients

  • 1 cup chickpea flour
  • 3/4 cup water
  • 2 tablespoons olive oil (plus more for cooking)
  • 1/2 teaspoon salt
  • 3/4 cup feta cheese, crumbled
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lemon juice
  • 1 cup cherry tomatoes, halved
  • A handful of fresh basil leaves, torn
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 450°F and place a skillet inside to heat.
  2. In a bowl, whisk together chickpea flour, water, olive oil, and salt. Let the batter rest for 30 minutes.
  3. Remove the hot skillet from the oven, coat with olive oil, and pour in the batter.
  4. Bake for 12 to 15 minutes until the edges are golden and crisp.
  5. While it bakes, blend feta, yogurt, and lemon juice until smooth and creamy.
  6. Spread the whipped feta over the slightly cooled socca.
  7. Top with cherry tomatoes, basil, and a crack of black pepper.
  8. Slice and serve warm or at room temperature.
