Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, cream the softened butter and 1/2 cup powdered sugar until light and fluffy.
- Stir in the vanilla extract.
- Gradually add the flour and salt, mixing until just combined.
- Fold in the finely chopped pecans until evenly distributed.
- Roll the dough into 1 inch balls and place them 1 inch apart on the prepared baking sheet.
- Bake for 12 to 15 minutes, until the bottoms are lightly golden and the tops remain pale.
- Allow cookies to cool slightly, then roll them in powdered sugar while still warm.
- Once completely cooled, roll them again in powdered sugar for a thick, snowy coating.
