- 2 large eggs
- 1 cup breadcrumbs (use panko for extra crunch)
- 1/2 cup grated parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for drizzling or spraying)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In one bowl, beat the eggs. In another, combine breadcrumbs, parmesan, garlic powder, salt, and pepper.
- Dip each asparagus spear into the egg, then coat with the breadcrumb mixture, pressing gently so it sticks.
- Place the coated asparagus on the baking sheet in a single layer. Drizzle or spray lightly with olive oil.
- Bake for 12 to 15 minutes, or until golden and crispy.
- Let rest briefly, then serve warm with your favorite dipping sauce.
Notes
- Use fine breadcrumbs or panko for best crunch.
- Dry asparagus thoroughly before coating to help the breadcrumbs stick.
- Add paprika or cayenne to the crumb mix for a spicy kick.
