Description

Crispy, cheesy baked asparagus spears coated in parmesan and breadcrumbs. Perfect as a snack, side, or party appetizer — crunchy on the outside and tender inside.

  • 1 bunch fresh asparagus (about 1 lb)
  • 2 large eggs
  • 1 cup breadcrumbs (use panko for extra crunch)
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for drizzling or spraying)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In one bowl, beat the eggs. In another, combine breadcrumbs, parmesan, garlic powder, salt, and pepper.
  3. Dip each asparagus spear into the egg, then coat with the breadcrumb mixture, pressing gently so it sticks.
  4. Place the coated asparagus on the baking sheet in a single layer. Drizzle or spray lightly with olive oil.
  5. Bake for 12 to 15 minutes, or until golden and crispy.
  6. Let rest briefly, then serve warm with your favorite dipping sauce.
