- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 1/2 cup beef broth
- 1/4 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons water
- Fresh parsley, for garnish
Instructions
- Season brisket with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear brisket for 3–4 minutes on each side until browned.
- Transfer brisket to a slow cooker. Add sliced onions and garlic on top.
- In a small bowl, whisk together beef broth, balsamic vinegar, brown sugar, Worcestershire sauce, and thyme. Pour over the brisket and onions.
- Cover and cook on low for 8–9 hours, or until brisket is tender.
- Remove brisket and slice against the grain. Transfer cooking liquid and onions to a saucepan.
- Mix cornstarch and water into a slurry, then stir into the saucepan. Simmer for 3–4 minutes until thickened into gravy.
- Serve brisket topped with balsamic onion gravy and garnish with fresh parsley.
