- 700 grams beef chuck, cut into chunks
- 1 small head green cabbage, chopped
- 3 medium carrots, sliced
- 3 medium potatoes, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 4 cups beef broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 bay leaves
Instructions
- Set your slow cooker to low heat so it is ready to use.
- Season the beef chunks with salt and black pepper in a bowl.
- Heat olive oil in a pan and lightly brown the beef on all sides.
- Add the beef, cabbage, carrots, potatoes, onion, garlic, tomato paste, beef broth, thyme, and bay leaves into the slow cooker.
- Cover and cook on low for 7 hours or on high for 4 hours until the beef is tender.
- Remove the bay leaves and taste the broth, adjusting seasoning if needed.
- Ladle into bowls and serve warm.
Notes
- Browning the beef adds extra flavor but can be skipped if needed.
- Let the stew rest for a few minutes before serving for better flavor.
- Add a splash of vinegar or lemon juice at the end for brightness.
