Description

A comforting and hearty slow cooker stew made with tender beef, soft cabbage, and wholesome vegetables simmered in a rich savory broth.


Ingredients

  • 700 grams beef chuck, cut into chunks
  • 1 small head green cabbage, chopped
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves

Instructions

  1. Set your slow cooker to low heat so it is ready to use.
  2. Season the beef chunks with salt and black pepper in a bowl.
  3. Heat olive oil in a pan and lightly brown the beef on all sides.
  4. Add the beef, cabbage, carrots, potatoes, onion, garlic, tomato paste, beef broth, thyme, and bay leaves into the slow cooker.
  5. Cover and cook on low for 7 hours or on high for 4 hours until the beef is tender.
  6. Remove the bay leaves and taste the broth, adjusting seasoning if needed.
  7. Ladle into bowls and serve warm.

Notes

  • Browning the beef adds extra flavor but can be skipped if needed.
  • Let the stew rest for a few minutes before serving for better flavor.
  • Add a splash of vinegar or lemon juice at the end for brightness.
