Description

A cozy fall breakfast bake featuring brioche soaked in apple cider custard, layered with caramelized apples and warm spices, then baked to golden perfection in a skillet.

Ingredients

Scale
  • 8 cups brioche bread, cubed
  • 1 cup apple cider
  • 1 cup whole milk
  • 4 large eggs
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 large apples, peeled and sliced
  • 3 tablespoons butter
  • Powdered sugar (optional, for dusting)
  • Maple syrup (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a skillet with butter.
  2. In a large bowl, whisk together apple cider, milk, eggs, brown sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
  3. In a separate pan, melt 1 tablespoon of butter and sauté the apples for 3–4 minutes until softened and slightly caramelized.
  4. Layer cubed brioche and sautéed apples in the greased skillet. Pour custard mixture over the top, gently pressing bread to soak.
  5. Bake for 40–45 minutes until golden and set. Tent with foil if browning too fast.
  6. Let it cool slightly, dust with powdered sugar, and drizzle with maple syrup before serving.

Notes

  • Use slightly stale bread for the best texture.
  • Warm the milk and cider slightly for a smoother custard blend.
  • Let the dish rest before slicing for cleaner servings.
