Ingredients

- 1 lb sea scallops, patted dry
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1/4 cup fresh lime juice
- 1 tsp lime zest
- 1/4 cup chopped fresh cilantro
- 1 tbsp honey (optional for sweetness)
Instructions
- Season scallops with salt and pepper on both sides.
- Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
- When hot, add scallops in a single layer. Sear 2–3 minutes per side until golden and opaque. Remove and set aside.
- In the same pan, reduce heat and add remaining butter and garlic. Sauté for 30 seconds.
- Add lime juice, zest, honey (if using), and cilantro. Stir and simmer for 1 minute.
- Return scallops to the pan and spoon sauce over them. Cook 1 more minute to coat and heat through.
- Serve immediately with extra sauce spooned on top.
Notes
- Do not overcrowd the pan to ensure a good sear on scallops.
- Pairs well with rice, quinoa, or a simple green salad.
- Substitute cilantro with parsley if desired.
