- 1.5 pounds boneless chicken thighs, cut into chunks
- 1 large red bell pepper, chopped
- 1 large green bell pepper, chopped
- 1 medium zucchini, sliced
- 1 large red onion, chunked
- 1/2 cup plain yogurt
- 3 cloves garlic, minced
- Juice of 1 lemon
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes.
- In a bowl, mix yogurt, garlic, lemon juice, olive oil, cumin, paprika, oregano, salt, and pepper. Add chicken and toss to coat. Marinate for at least 2 hours or overnight.
- Lightly oil the grill grates or grill pan to prevent sticking.
- Thread chicken, peppers, zucchini, and onion alternately onto skewers.
- Grill skewers for 10 to 12 minutes, turning every few minutes until the chicken is cooked through and vegetables are charred.
- Remove from grill and let rest for 2 minutes. Optionally, squeeze more lemon juice before serving.
- Serve hot with rice, salad, or flatbread.
