Description

Sizzling Garlic Chicken Stir-Fry with Peppers & Steamed Rice is a flavorful, aromatic dish featuring tender chicken, crisp bell peppers, and a savory garlic sauce, served over perfectly steamed rice for a satisfying meal.

  • 2 chicken breasts, thinly sliced
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp cornstarch (optional, for thickening sauce)
  • 2 cups cooked jasmine rice
  • 1 tbsp sesame seeds (for garnish)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 5-6 minutes, until browned and cooked through. Remove the chicken and set aside.
  2. In the same skillet, add the bell peppers and onion. Stir-fry for 3-4 minutes, until the vegetables are tender-crisp.
  3. Add the minced garlic and grated ginger, and cook for an additional 1 minute until fragrant.
  4. In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, and cornstarch (if using). Pour the sauce over the vegetables and bring to a simmer for 2-3 minutes until the sauce thickens.
  5. Return the cooked chicken to the skillet and toss everything together to coat in the sauce. Cook for another 2-3 minutes until heated through.
  6. Serve the stir-fry over a bed of steamed jasmine rice, garnished with sesame seeds and fresh cilantro if desired.

Notes

  • Add chili flakes or sliced fresh chili for a spicier version.
  • For extra flavor, you can add a splash of lime juice or stir in some chopped peanuts for crunch.
