- 1 pound raw shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1⁄3 cup sun-dried tomatoes, sliced
- 2 cups fresh spinach, packed
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- ¼ teaspoon red pepper flakes
- Salt and black pepper, to taste
Instructions
- Season shrimp with salt and pepper. Heat olive oil and butter in a large skillet over medium-high heat.
- Add shrimp and cook for about 2 minutes per side until pink and cooked through. Remove and set aside.
- Lower the heat and add minced garlic to the skillet. Sauté for 30 seconds until fragrant.
- Stir in sun-dried tomatoes and cook for another minute.
- Pour in heavy cream and bring to a gentle simmer.
- Add grated parmesan and red pepper flakes. Stir until cheese melts and sauce is smooth.
- Fold in spinach and let it wilt into the sauce.
- Return shrimp to the skillet and coat with the sauce. Cook for 2–3 more minutes to heat through.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve hot over pasta, rice, or with crusty bread.
