- 3 ounces semi-sweet chocolate chips
- 3 tablespoons unsalted butter
- 1 large egg
- 1 large egg yolk
- 3 tablespoons granulated sugar
- ¼ teaspoon pure vanilla extract
- Pinch of fine sea salt
- 3 tablespoons all-purpose flour
- Vanilla ice cream for topping
Instructions
- Preheat oven to 425°F (220°C) and lightly grease a small ramekin or oven-safe mug.
- Melt chocolate chips and butter together in a microwave-safe bowl in 20-second intervals, stirring until smooth.
- In a separate bowl, whisk together the egg, egg yolk, sugar, vanilla extract, and sea salt until pale and slightly thickened.
- Gradually fold the melted chocolate mixture into the egg mixture.
- Sift the flour over the mixture and gently fold until just combined.
- Pour batter into the prepared ramekin and bake for 12-14 minutes until the edges are set but the center is still soft.
- Remove from oven and let sit for 1-2 minutes before inverting onto a plate.
- Serve immediately with a scoop of vanilla ice cream.
Notes
- Do not overbake; the center should remain molten for the lava effect.
- Use good quality semi-sweet chocolate for the richest flavor.
- Ramekin can be greased with butter and lightly dusted with cocoa powder to prevent sticking.
