Description

Singapore Noodles is a quick and flavorful stir fry made with thin rice noodles, tender shrimp, soft scrambled egg, crisp vegetables, and warm curry seasoning. It is colorful, savory, lightly spiced, and perfect for a fast homemade dinner.


Ingredients

  • 200 grams dried thin rice noodles
  • 200 grams raw shrimp, peeled and deveined
  • 2 large eggs, lightly beaten
  • 1 medium red bell pepper, thinly sliced
  • 1 cup fresh bean sprouts
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 2 teaspoons curry powder
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Soak the rice noodles in warm water for about 5 minutes, until just flexible, then drain well.
  2. Heat a large wok or skillet over medium high heat until hot.
  3. Add the vegetable oil and swirl to coat the pan.
  4. Add the minced garlic and shrimp, then stir fry for about 2 minutes, until the shrimp turn pink.
  5. Push the shrimp to one side of the pan and pour in the beaten eggs. Scramble lightly until just set.
  6. Add the drained noodles, curry powder, soy sauce, sugar, salt, and black pepper. Toss everything together until evenly coated.
  7. Add the red bell pepper, bean sprouts, and green onions. Stir fry for about 2 minutes, until the vegetables are crisp tender.
  8. Drizzle the sesame oil over the noodles, toss once more, then serve immediately.

Notes

  • Soak the noodles only until flexible, not soft, so they do not turn mushy in the pan.
  • Keep the heat high while stir frying so the noodles stay light and the vegetables stay crisp.
  • You can swap the shrimp with tofu or chicken if needed.
  • For extra heat, add a pinch of chili flakes while cooking.
